    Antipasto Misto with Marinated Artichokes

    This starter features a selection of Italian and Spanish cured meats from the chiller cabinets. It can be made a day ahead and kept in the fridge, wrapped in clingfilm, to keep it fresh.

    • Preparation time: 10 minutes

    Serves: 8


    • 180g tub Waitrose Marinated & Grilled Artichoke Hearts, drained
    • ¼ pack fresh chives
    • 2 tbsp Acetum Balsamico Bianco (white balsamic vinegar)
    • 2 tbsp chopped fresh coriander
    • 80g pack Waitrose Farm Assured Riserva Parma Ham
    • 70g pack Waitrose Napoli Salami
    • 70g pack Waitrose Spanish Chorizo Slices
    • Zest of 1 lime, pared or cut into thin strips
    • Mixed olive or sun-dried tomato pave, warmed, to serve


    1. Place the artichokes in a bowl. Snip in the chives and add the vinegar, coriander and a little freshly ground black pepper. Stir gently to mix.
    2. Pile the meats onto a platter. Place the artichokes next to the meats and scatter with the pared lime zest. Serve with chunks of warmed bread.
