Apple and cinnamon cake

Absolutely delicious cake and worth a try

  • Total time: 1 hour 30 mins

Serves: 6


  • 300g self raising flour
    1 1/2 tsp ground cinnamon
    1/2 tsp salt
    250g demerara sugar
    50g raisins
    125g melted butter
    2 large eggs, beaten
    175ml milk
    250g eating apples, peeled cored and chopped
    icing sugar for dredging (optional)


  1. Sift the flour, cinnamon and salt into a bowl and stir in the sugar and raisins. Mix in the melted butter, eggs, milk and apple and beat until smooth.
  2. Pour into a lined an greased 20cm square cake tin (8" round one). Bake in preheated oven (180C, 350F) for 1 to 1 1/4 hours unto the cake springs back when lightly pressed.
  3. Turn onto a wire rack to cool, then sprinkle with icing sugar (if desired).
