    Apple and Fennel Salad with Tofu and Chive Dressing

    Serves: Serves 4 as a starter or side dish

    Ingredients

    • 75g silken firm tofu
    • 1 tbsp rice vinegar
    • 1 tbsp apple juice
    • 1/2 crushed garlic clove
    • 2 tbsp chopped chives
    • 2 sliced red apples
    • 1 thinly slice fennel bulb
    • 2 tbsp chopped walnuts

    Method

    1. The sweetness of the apples and the aniseed flavour of the fennel is rounded out by this smooth tofu dressing. In a food processor, blend 75g silken firm tofu, 1 tbsp rice vinegar, 1 tbsp apple juice, 1/2 crushed garlic clove and 2 tbsp chopped chives until smooth. Pour into a screw-top jar and chill until ready to use (it will keep for up to a week).
    2. In a large bowl, combine 2 sliced red apples and 1 large, thinly sliced fennel bulb. Add the dressing and mix well. Sprinkle with 2 tbsp chopped walnuts and serve.
