    Apple Puffs

    • Preparation time: 30 minutes, plus cooling
    • Cooking time: 20 minutes
    • Total time: 50 minutes 50 minutes

    • freshly ground nutmeg, to taste
    • 600g cooking apples, peeled and roughly chopped
    • Sugar to taste
    • 425g ready-rolled puff pastry (2 sheets)
    • 1 large egg, lightly beaten
    • Icing sugar, for dusting


    1. Preheat the oven to 180°C/gas mark 4.
    2. Put the apple in a large pan with 75ml water. Cover and cook gently for 20-25 minutes until soft. Add sugar and nutmeg to taste. Transfer to a bowl and leave to cool.
    3. Roll one of the pastry sheets out on a lightly floured surface to about 28cm square and divide into 4 squares. Brush each of the squares edges with beaten egg. Put 1 heaped tbsp of cold apple mixture on one side of each square and fold over into a triangle. Press the edges to seal. Brush with the egg. Place on a baking tray, cover and chill for 20 minutes. Repeat with the remaining pastry.
    4. Bake the puffs for 15 minutes or until well-risen and golden. Remove from the oven, sprinkle with icing sugar and return to the oven for 2-4 minutes or until the sugar has dissolved. Leave to cool on a wire rack, then serve warm or cold.
