    Aromatic Sticky Rice with Leek and Star Anise (for 4)

    This is a fantastic way to add flavour to rice and cook the vegetables at the same time.

    • Christmas
    • Preparation time: 10 minutes
    • Cooking time: 10 minutes to 12 minutes
    • Total time: 20 minutes to 22 minutes 25 minutes

    Serves: 4

    Ingredients

    • 250g Thai fragrant rice
    • 2 leeks, sliced
    • 1 slice lime
    • 1 star anise
    • 2 cloves garlic
    • 1cm piece root ginger, peeled
    • Garnish with chopped coriander

    Method

    1. Place the rice in a sieve and rinse thoroughly in cold water. Place in a pan with the leek, lime, star anise, garlic and ginger.
    2. Cover with 600ml cold water. Bring to the boil and simmer, covered for 10-12 minutes until the rice is tender.
    3. Remove the lime, star anise, garlic and ginger. Season to taste and garnish with coriander.

    Variation

    You could serve 2 x 350g packs ready-made Waitrose Thai Fragrant Rice, garnished with chopped coriander and thin slices of salad onion.
