Aspagus and ham raps

Light snack or starter meal, quick and easy.

  • Total time: 10-12 minutes

Serves: 6


  • 250g Fresh Asparagus
    300g freshly sliced ham
    Small salad mix.


  1. Soak 250gs of fresh asparagus for 20 minutes having taken 5mm off the cut end. Break the asparagus as close to to the lower stem as possible, discarding lower stalk. Place the stalks In an oblong microwave dish with 250 ml or almost enough water to float the stalks and microwave of full power for 4 minuets. Allow to stand for 1 minute, then flush the contents with cold water and leave to dry for a few moments.
  2. Unwrap 300gr of freshly sliced ham and place a small dob of mayonnaise on each slice. Take a stalk of cooled asparagus and roll-up the ham. Leave in a refrigerator in a sealed container for up to 3 days. Serve on a salver with a light salad and cherry tomatoes.
  3. Variations. Lightly sprinkle the ham with herbs prior to rolling with such herbs as Sage, Tarragon.. Best done an hour or two in advance of serving.
