    Aubergene with Chilli

    I made this for supper on our last night in Oman to share with friends. As it was not my home I just had to find what ingredients were in the storecupboard. We served it with freshly cooked giant prawns, garlic mushrooms, salad, and humous. (delicious)

    Serves: 6


    • 3 small aubergine’s

      1 red onion

      3 chilli’s

      4 cloves of garlic

      2 large beef tomatoes

      olive oil

      Salt & pepper

      Good splash of red wine

      Freshly chopped parsley


    1. Gently fry chopped aubergines and onion in olive oil, then add garlic, chilli, salt & pepper. Add chopped tomatoes and wine, cook with lid until aubergine is soft. Check seasoning and serve with fresh parsley.
