    Aubergine And Tomato Gratin

    Ingredients

    • 2 tbsp grated Parmigiano Reggiano
    • ½ x 350g tub Waitrose Four Cheese Cooking Sauce
    • 115g tub Waitrose Organic Moroccan Chickpea Pâté
    • 2 slicing tomatoes
    • 4 tsp garlic-infused olive oil
    • 1 medium aubergine

    Method

    1. Cut a medium aubergine into 1cm-thick slices and arrange in a single layer on a large foil-lined baking sheet or grill rack. Brush with 2 tsp garlic-infused olive oil, season lightly and grill for 8 minutes until light golden. Thickly slice 2 slicing tomatoes and add to the baking sheet, turning the aubergine slices and arranging them over the tomatoes.
    2. Brush with another 2 tsp garlic-infused olive oil. Grill for a further 8 minutes until tender. Arrange the aubergine slices in a shallow heatproof dish and dot with 115g tub Waitrose Organic Moroccan Chickpea Pâté. Arrange the tomato slices on top, then continue layering with alternate layers of aubergine and tomato. Heat ½ x 350g tub Waitrose Four Cheese Cooking Sauce in a small pan and spoon over the vegetables.
    3. Sprinkle with 2 tbsp grated Parmigiano Reggiano. Cook under a moderate grill for 5-6 minutes until golden. Serve with a herb salad and warmed olive ciabatta.
