Avril's Chocolate & Apple Cake

This is a cake that works well as both a tea cake and a dessert served with cream. Its a family favourite and we've given out the recipe several times

    Baking time - 1hr15min - 1hr30min

    550g (1.25lb) eating apples
    225g (8oz) butter
    225g (8oz) caster sugar
    2-3 drops vanilla essence
    4 eggs, beaten
    225g (8oz) self-raising flour
    25g (1oz) cocoa powder
    about 1 tbsp milk
    icing sugar for the top*


  1. 1 Preheat the oven to 180 deg C, 350 deg F, Gas 4. Grease and line a 23cm (9in) round cake tin with greaseproof paper.
  2. 2 Peel, core and chop the apples into pieces.
  3. 3 Cream the butter, sugar and vanilla essence together until light and fluffy, then gradually beat in the eggs, alternating with the sieved flour and cocoa until creamy. Add milk if necessary.
  4. 4 Spread just over half the mixture evenly in the prepared tin. Arrange the apples over the mixture, pressing them in lightly. Cover with the remaining cake mixture and level the surface.
  5. 5 Bake in the centre of the oven until the cake is cooked. (Test with a skewer.)
  6. 6 Cool in the tin for 10 minutes then turn out and remove paper. Transfer to a wire tray to cool. Dust with icing sugar when cold. (NB: *alternative topping is melted chocolate.)
