    Baba Ganoush

    Makes: about 450ml


    • 2 large aubergines
    • 1 tablespoon lemon juice
    • 1 tablespoon ground cumin
    • 1 clove garlic, chopped
    • 1 ½ tablespoons olive oil
    • Salt and freshly ground black pepper
    • 1 tablespoon finely chopped parsley
    • 225ml tahini (optional)


    1. Char the aubergines by holding them directly over a gas flame with tongs until they are soft and their juices begin to ooze out. Alternatively, bake at 220°C/gas 7 for about 30 minutes. Leave to cool.
    2. Peel the aubergines and leave the flesh in a colander to drain. Purée the flesh in a food processor with the lemon juice, cumin, garlic and oil. Season to taste.
    3. Transfer to a bowl and stir in the parsley, and the tahini, if you are using it. Serve with pitta bread.
