    Baby avocado, spelt and smoked trout salad

    Serves: 2

    Ingredients

    • 1 tbsp Sunflower seeds
    • 1 tsp Cumin seeds
    • 1 Lemon, finely grated zest and juice
    • 2 tbsp Extra virgin olive oil
    • 150g tin Spelt, drained
    • 125g Hot-smoked, trout
    • 2 Baby avocados, stoned, peeled and sliced
    • 2 tbsp Chopped parsley

    Method

    1. Toast the sunflower seeds in a dry pan and set aside.
    2. Toast the cumin seeds and roughly crush. Combine with lemon zest, oil and lemon juice to taste. Season
    3. Mix the spelt, trout, avocado and parsley with the dressing. Divide between plates; sprinkle with the sunflower seeds.
