    Baby plum tomato, mushroom & courgette kebabs

    • Preparation time: 3 minutes to 5 minutes
    • Cooking time: 6 minutes to 8 minutes
    • Total time: 9 minutes to 13 minutes 15 minutes

    • 16 Baby plum tomatoes
    • 1 Large courgette, thickly sliced
    • 16 Baby button mushrooms
    • 50g Your favourite blue cheese
    • 5 tbsp Greek yogurt


    1. Thread the baby plum tomatoes, courgette slices and baby button mushrooms onto 8 skewers and brush with olive oil. If using wooden skewers, soak them first in cold water for 20 minutes.
    2. Place kebabs under a hot grill for 6-8 minutes, turning occasionally, until the vegetables are tender. Crumble about 50g of your favourite blue cheese into a bowl and stir in 5 tbsp Greek yogurt. Season and serve with the kebabs.
