    Bacon and Mozzarella Pasta

    • Preparation time: 5 minutes
    • Cooking time: 20 minutes
    • Total time: 25 minutes 25 minutes

    Serves: 4


    • 400g pasta shapes, such as shells
    • 1 tbsp olive oil
    • 1 onion, finely chopped
    • 8 rashers back bacon, chopped
    • 1 tbsp tomato purée
    • 1 tsp chilli sauce
    • 400g tin chopped tomatoes
    • 142ml carton double cream
    • 2 balls Mozzarella
    • small pack fresh basil, roughly chopped
    • salt and freshly ground pepper


    1. Cook the pasta according to packet instructions.
    2. Meanwhile, make the sauce. Heat the olive oil in a pan over a medium heat, add the onion and sweat until soft and golden. Add the bacon and fry until golden. Add the tomato purée and cook for a minute. Add the chilli sauce and chopped tomatoes, bring to a simmer, season, and cook gently over a very low heat for 5 minutes.
    3. Add a little of the sauce to the cream and mix to loosen, then return the whole lot to the pan until heated through. Adjust the seasoning. Meanwhile, rip the Mozzarella into small pieces with your hands. Remove the sauce from the heat, and stir in the Mozzarella and basil. Drain the pasta and toss with the sauce.
