    Baked Apples and Dates in Marsala

    Sweet English Cox apples and succulent Medjool dates are baked slowly in Marsala wine to create a warming dessert. Serve this low-fat dessert with yogurt or low-fat ice cream for a dessert that is difficult to resist.

    • 4 English Cox apples, cored and halved
    • 180g Medjool dates, stoned
    • 40g caster sugar
    • 275ml Pellegrino Marsala Garibaldi Dolce
    • 2.5cm cinnamon stick
    • 1 vanilla pod, split


    1. Preheat the oven to 200°C, gas mark 6. Place the apples, cut-side down in a medium baking dish with the dates.
    2. Stir the sugar into the Marsala until almost dissolved, then pour it over the apples and dates. Add the cinnamon stick and the vanilla pod to the dish.
    3. Place in the oven, uncovered, and bake for 40-50 minutes, until the apples are soft and the Marsala has reduced by half. Remove from the oven and allow to cool in the dish so that the apples continue soaking up the Marsala.
    4. Remove the vanilla pod and the cinnamon stick when the apples are cool. Serve with natural yogurt, frozen yogurt or a low-fat ice cream, sprinkled with cinnamon.

    Cook's tips

    As an alternative, you can replace the dates with dried figs or, if you have any sherry left over from the Christmas festivities, you can use it in place of the Marsala.
