    Baked Butternut Squash with Spicy Butter Beans 1

    • Cooking time: 45 minutes
    • Total time: 1 hour 60 minutes

    Serves: 4


    • 2 butternut squashes
    • 2 tbsp olive oil
    • 1 clove garlic
    • 2 sliced leeks
    • 1 red pepper
    • 410g can of butter beans
    • 310g jar of Thai Delight Laksa
    • 1 handful roughly chopped fresh coriander


    1. Preheat the oven to 190°C, gas mark 5. Cut two butternut squashes in half lengthways, deseed and place on a baking sheet, cut sides facing up. Brush the surfaces with olive oil and season.
    2. Bake for 45 minutes or until tender. Meanwhile, heat 2 tbsp olive oil in a pan, add a chopped clove of garlic, two sliced leeks and a chopped red pepper. Stir well and cook for 3-4 minutes, or until softened.
    3. Stir in a 410g can butter beans, drained, and a 310g jar Thai Delight Laksa, plus 75-100ml of cold water. Simmer for 5 minutes, then spoon over the cooked squash and sprinkle with a handful of roughly chopped fresh coriander.
