    Baked Fruit Bruchetta

    Baking fruits such as plums and apricots really enhances their flavour. This can be prepared in advance and then baked when needed. It can be served hot, warm or cold.

    • Cooking time: 40 minutes
    • Total time: 50 minutes to 55 minutes 55 minutes

    Serves: 6


    • 1 vanilla pod
    • 4 ripe apricots
    • 6 ripe plums
    • 2 ripe peaches
    • 3-4 tbsp caster sugar
    • 1 lemon, zested
    • 1 tsp ground cinnamon
    • 6 thick slices of white bread, such as ciabatta, brioche, or bloomer
    • 50g unsalted butter, softened


    1. Preheat the oven to 180˚C/gas mark 4. Split the vanilla pod and scrape out the seeds with the back of a knife. Cut the fruit into quarters, discard the stones, and mix with 1 tbsp sugar, vanilla seeds, lemon zest and ground cinnamon. Leave to macerate while you prepare the other ingredients.
    2. Toast one side of the slices of bread under a grill. Butter the untoasted side. Place on a baking tray, butter side down. Heap the macerated fruit onto the slices of bread and then dot the remaining butter on top of the fruit. Sprinkle 2-3 tbsp sugar on top of the fruit and bake in the oven for about 30 minutes, until it is caramelised and golden brown. Serve with double cream or crème fraîche.
