    Baked Giganti Mushrooms with Butter Bean Mash

    • Total time: 1 hour 5 minutes 60 minutes 5 minutes

    Serves: 4


    • 8 Giganti mushrooms
    • 1 pack fresh marojam
    • 70g Dairy Crest Garlic Butter
    • 4tbsp cold water
    • 2 x 420g Waitrose Butter Beans
    • 200ml milk
    • 1 garlic clove


    1. Remove the stalks from 8 Giganti mushrooms and place the mushrooms in a baking dish. Remove the stalks from a pack of fresh marjoram and chop the leaves. Divide between the mushrooms. Top with a 70g pack of Dairy Crest Garlic Butter.
    2. Pour 4 tbsp cold water into the dish and bake in the oven at 190°C, gas mark 5, for 45 minutes or until tender. Drain and rinse 2 x 420g cans Waitrose Butter Beans. Place in a saucepan with 200ml milk and a crushed garlic clove. Simmer for 3 minutes, then blend to a purée.
    3. Reheat in the saucepan. Season. Serve with the mushrooms.
