    Baked Minted Sea Bass with Lemon Potatoes

    Serves: 2

    Ingredients

    • ½ a Taylors Preserved Lemon
    • 500g sliced new potatoes
    • 1 tbsp of Gaea Cretian Extra Virgin Olive Oil
    • 500g Sea bass
    • Mint sprigs, plus extra to chop and serve
    • Kalamata Olives

    Method

    1. Chop ½ a Taylors Preserved Lemon, mix with 500g sliced new potatoes and 1 tbsp of Gaea Cretian Extra Virgin Olive Oil and season.
    2. Spread over a baking dish and cook in a preheated oven, 200°C, gas mark 6, for 30 minutes, until the potatoes are almost tender.
    3. Stuff a 500g sea bass with a few mint sprigs, season inside and out and lay on top of the potatoes.
    4. Scatter a handful of Kalamata olives over the potatoes and bake for a further 20-25 minutes, until the fish is cooked. Sprinkle chopped mint over before serving.
