    Baked Nectarines Stuffed with Pistachios and Almonds

    Serves: 4 - 6

    Ingredients

    • 5 nectarines
    • 55g shelled pistachios
    • 85g macaroons
    • 25g soft brown sugar
    • 50g softened butter
    • 2 medium egg yolks
    • 2 tbsp amaretto liquer
    • 2 tbsp flaked almonds

    Method

    1. Halve and stone 5 nectarines and place in a buttered ovenproof dish, cut side upwards. Place 55g shelled pistachios, 85g macaroons and 25g soft brown sugar in a food processor and pulse to fine breadcrumbs.
    2. Add 50g softened butter and 2 medium egg yolks and process to a paste. Spoon a tablespoon of the mixture into each nectarine cavity and drizzle 2tbsp amaretto liqueur over the top.
    3. Scatter with 2tbsp flaked almonds and cook in a preheated oven 190°C, gas mark 5 for 25-30 minutes.
