Baked potatoes with ham and cheddar
4 Baking potatoes
150g Cheddar, grated
60g Dry-cured ham, diced
2½ tbsp Finely chopped chives
½ tsp Dijon mustard
¼ tsp Freshly ground black pepper
Preheat the oven to 200C/
gas 6. Scrub the potatoes, pat
dry and prick all over with a fork.
Cook in the microwave on full
power until soft, then put in the
oven to crisp up for 10 minutes.
Cool for 5 minutes; cut off the
top third of the potatoes. Scoop
the insides from both parts into a bowl; discard the empty tops.
Mash the butter into the potato.
Beat in most of the cheese and
all of the remaining ingredients.
Adjust the seasoning to taste.
Spoon the filling back into the
potato skins; sprinkle on the rest
of the cheese. Place on a baking
tray and return to the oven for
20 minutes more, until the top is
golden. Cool slightly before
serving with a green salad,
