    Baked Potatoes with Spinach and Stilton

    Serves: 4

    Ingredients

    • 4 large potatoes
    • 225g bag Waitrose Solo Baby Spinach
    • 15g butter
    • 200ml hot semi-skimmed milk
    • 1/2 tsp salt
    • Freshly ground black pepper
    • 40g Waitrose Select Blue Stilton

    Method

    1. Bake 4 large potatoes at 220°C, gas mark 7, for at least an hour until the skins are crisp and the insides are fluffy. Scoop the insides into a bowl, add a 225g bag Waitrose Solo Baby Spinach, roughly chopped, 15g butter, 200ml hot semi-skimmed milk, and ½ teaspoon salt and freshly ground black pepper.
    2. Roughly mash then spoon back into the potato skins. Place on a baking tray, crumble 40g Waitrose Select Blue Stilton evenly over the top and place under a medium-hot grill for 2-3 minutes, or until bubbling and browned.
