Banana Bread

 1 x 1kg loaf

Ingredients

  • Vegetable oil for greasing the loaf tin
  • 120g caster sugar
  • ½ level tsp salt
  • 360g self-raising flour
  • 1 large egg
  • 125ml full fat milk
  • 50g butter, melted
  • 3 ripe bananas, peeled and chopped into 1-2cm chunks

Method

  1. Preheat the oven 180°C, gas mark 4. Grease a 1kg loaf tin with a little oil, making sure you get into all the corners with a brush.
  2. Put the sugar, salt and self-raising flour in the mixing bowl. Make a well and add the egg, milk and melted butter. Mix well.
  3. Add the bananas to the mixture and fold them in using a tablespoon. Put all the mixture into the loaf tin, scraping out any left in the bowl with the spatula. Smooth the mixture down with the back of a spoon.
  4. Put the loaf on the middle shelf of the oven for an hour. When cooked the loaf will be risen and golden brown. Take it out of the oven and push in a skewer to test if it's cooked. If there is any mixture clinging to the skewer put your loaf back in the oven for another 10 minutes. Remove from the oven and allow to cool a little before turning the loaf on to a cooling rack. Serve warm, in slices, spread with soft butter.

I just made this as per the recipe but made it into muffins and they were delicious! I worried when mixing as it was quite dry but once you start mixing in the bananas things start to loosen up well. Really delicious not too sweet either. Lush!

The recipe is great! Really easy to make - no endless creaming butter and sugar as you melt the butter, no mashing bananas ... It rose brilliantly. All it needs now is to be eaten.

I added a handful of raisins, some cinnamon and a tbsp golden syrup, and used soft brown rather than caster sugar: very more-ish. Excellent recipe, thanks!

I like to add a tbsp of acacia honey to it- gives it that extra umpth!

I used half wholemeal and half plain white flour and added a tablespoon of crunchy peanut butter to the recipe - a delicious breakfast treat!

i can't understand why this recipe only gets 3 stars. I've made it v. successfully at least 5 times now and it's def. my favourite banana bread recipe that I've come across. the lastest time I used plain flour & baking powder instead of self-raising and it still turned out v. well. you can't go wrong with it!

Tried the recipe today, with slightly less flour, 4 bananas, of which I mashed 3 and it turned out really well, Its really tasty.

I made this last night and we had some this morning for breakfast. It was pretty good. I tweaked the recipe a little thanks to some of the comments. I put in an extra banana, and in fact mushed 2 and cut up 2. I put in a fraction less flour (about 30g less) and because I only have small/medium eggs I put in 2 eggs. I'm sure this may not all have been necessary but I was pretty pleased with the result. I cooked it at 180 in a fan oven for an hour.......but my fan doesn't seem to get as hot as other fan ovens.

I used this recipe yesterday, and was amazed at how thick the mixture was. I really thought they had made a mistake in the amount of flour for the recipe. However, when my hand mixer had got 'stuffed up' the third time, I decided to mix it with a wooden spoon. Then I added the bananas, and it seemed OK. I put it in the oven for the suggested time, and it came out perfect. It tasted very good also. Next time, I will mix it in my large Kenwood Chef.

I too was concerned about the consistency of the mix - it was very doughy, but the end result was perfect - very nice with some butter spread on each slice! . If it helps anyone else, I was using a fan-assisted oven heated to 170C for 1 hour which did the trick.
