    Banana Bread

    I honed this very easy recipe whilst living in Tijuana during the adoption of our twins Clifford&Margot. I had no weighing scales .... so used one of the babies pyrex jars as the measuring device - the size of a standard yoghurt pot (5oz) or 125ml. It is an excellent baby birthday cake omitting the nuts.

    • Total time: 15 minutes preparation, 1 hour cooking

    Serves: 1


    • 3 cups plain white flour
      1 cup golden cane caster sugar
      1 heaped teaspoon baking powder
      1 teaspoon ground cinnamon
      1 cup natural yoghurt
      1 cup colza cooking oil
      3 eggs
      4 good sized ripe bananas mashed
      150 grams chopped walnuts or pecans (optional)


    1. Sift flour, baking powder & cinnamon together into a bowl
    2. Stir in the sugar
    3. Make a well in the centre of the dry ingredients and pour in beaten eggs, mashed bananas, oil, yoghurt and pecans. Mix well but don't overmix, ensure the pecan pieces do not have flour residues in their crevices
    4. Pour into a 1.5kg baking loaf tin. If you prefer more surface crust use a 20cmx20cm shallow baking tin Ensure that the tin of your choice is well buttered and floured.
    5. Bake at 200 C for 20 minutes. After 20 minutes turn the oven temperature down to 170 C. Banana bread baked in the loaf tin will take approx 1 hour Banana bread baked in the shallow tin will take approx 3/4 hour Enjoy ......
