    Banana Flambè

    • Preparation time: 5 minutes
    • Cooking time: 5 minutes

    Serves: 2


    • 30g unsalted butter
    • 4 small bananas
    • Juice of 1 small orange
    • Juice of half a lemon
    • 1 tablespoon unrefined caster sugar
    • 3 tablespoons dark rum


    1. Melt the butter in a non-stick frying pan over a medium heat. Peel and halve the bananas. Add to the sizzling butter and fry briskly for 2 minutes before turning and frying for another minute.
    2. Add the orange juice, lemon juice and sugar. Cook briskly for 2 minutes or until the sugar has dissolved and the juice has reduced to a light syrup. Pour in the rum and immediately set it alight - standing well back as you do so. Give the pan a quick shake then, as soon as the alcohol has burned out, spoon the bananas and juice into 2 bowls. If you like, place a scoop of good vanilla ice cream in each bowl before adding the bananas.
