    Banana Sesame Fritters

    Serves: 4

    • 50g self-raising flour
    • 2 tbsp Waitrose Sesame Seeds
    • 1 egg yolk
    • 5 tbsp cold milk
    • 4 Fairtrade bananas
    • 5 cm of vegetable oil
    • 4 tbsp Tropical Forest Honey

    1. Place 50g self-raising flour and 2 tbsp Waitrose sesame seeds into a bowl and make a central well. Add an egg yolk, gradually stir in 5 tbsp cold milk to make a thick batter. Whisk the egg white until stiff, then fold into the batter.
    2. Peel 4 Fairtrade bananas and cut each into 5 diagonal slices. Tip into the batter and stir lightly to coat.
    3. Heat 5cm of vegetable oil in a wok or pan until a drop of batter rises to the surface surrounded by bubbles and starts to brown. Fry the bananas until crisp, then drain. Warm 4 tbsp Tropical Forest Honey. Drizzle over fritters and sprinkle with sesame seeds.
