    Basic Sweet Crêpes

    Makes: 10 to 12 large crêpes


    • 75g plain flour
    • 130ml milk
    • 70ml lukewarm water
    • 2 eggs
    • 20g caster sugar
    • 30g unsalted butter, melted
    • Unsalted butter, for greasing
    • Pinch salt


    1. Mix all the ingredients in a food processor, then cover and leave to stand for at least 30 minutes.
    2. Put a non-stick pan over a medium heat and coat with butter. Pour in 2-3 tablespoons of batter, tilting it to coat the pan. When the underside is golden, flip and cook the second side. Remove. Continue cooking the remaining batter, buttering the pan and stirring the batter before each crêpe.
