    Basic tomato sauce

    Great on its own or as a tomato base for different sauces, such as Moussaka or Provencal.

    • Cooking time: 25 minutes to 30 minutes
    • Total time: 25 minutes to 30 minutes 30 minutes

    Makes: Makes 8 servings

    Ingredients

    • 1 Medium carrot, chopped
    • 1 Large onion, chopped
    • 2 Garlic cloves, crushed
    • 2kg Tinned plum tomatoes, roughly chopped
    • 1 tbsp Tomato purée
    • A handful, Chopped basil

    Method

    1. Heat the olive oil in a large saucepan and add the carrot, onion and garlic. Fry for two minutes until soft.
    2. Tip in 2kg plum tomatoes, roughly chopped, then stir in the tomato purée and a handful of chopped basil.
    3. Season, cover and simmer for 20 minutes, until the tomatoes are broken down and tender. Whiz until smooth.
