    Basil Aioli

    This is a gorgeous, herby aioli, which makes the perfect partner to fat chips or potato skins. Adding cayenne pepper gives it a bit of a kick, although this can easily be omitted if you prefer.

    Ingredients

    • 25g chopped fresh basil
    • ½ garlic clove
    • Large pinch of salt
    • Large pinch of pepper
    • 250g of mayonnaise

    Method

    1. In a food processor, blend together 25g chopped fresh basil, ½ garlic clove (chopped), and a large pinch each of salt and cayenne pepper. Blend until finely chopped. Add 250g mayonnaise and blend until smooth. Chill, covered with clingfilm, for around an hour to allow the flavours to develop. Serve with chunky chips or potato skins.
