BBQ Mango, Prawn, Prosciutto and Avocado Salad

This salad reminds me of summer and not just because of the BBQ element!

Serves: 4


  • 500g Green Prawns (Uncooked) peeled and deviened
    4 slices of Prosciutto
    2 Mangos flesh removed and sliced
    1 Avocado sliced
    80g Rocket
    1tbsp Olive Oil
    1tbsp Red Wine Vinegar
    2tsp Castor Sugar
    1/2tsp Dill Leaf Tips
    1/2tsp Lemon Pepper Seasoning
    1tbsp Lemon Juice


  1. Preheat a BBQ char grill plate. Place prawns and prosciutto on BBQ and cook for 3-5 minutes or until cooked. Remove from BBQ and tear prosciutto into pieces.
  2. Mix together mangoes, prawns, prosciutto, avocado and rocket.
  3. Combine remaining ingredients in a screw-top jar and shake well. Drizzle over salad to serve.
