Beef for a Family Party (6)

If youve had lots of turkey, try this for a change

  • Total time: 2 1/2 hours

Serves: 6


  • 3lb waitrose topside beef
    1 onion
    1 clove garlic
    2 stock cubes
    a pint of stout
    2 dessert spoons of flour


  1. A good piece 3lb of Waitrose Topside (or two for 12) is a start. Brown joint in your metal casseroll dish with a little oil, add in a sliced onion and a clove of chopped garlic & some seasoning, fry until onions are mushy; add in two desert spoon of flour & fry for half a minute more . Add in a pint of stout (guiness perhaps) and crumble in 2 stock cubes. Cover & oven cook for 2 hours, turning in liquid every 40 minutes. It will be tender, well done with great gravy. Slide beef & serve with mashed spuds; and with parsnip puree (boiled parsnip liquidised with cream & butter) if liked. Great for a winter lunch.
