    Beef noodle stir-fry

    A nest of dried noodles is brimming with possibilities for the impatient cook. A quick dunk in simmering water is all they need to be ready for stir-fries, soups and even salads.

    • Total time: 20 minutes 20 minutes

    Serves: 4


    • 250g Egg noodles
    • Groundnut oil
    • 2 Garlic cloves, chopped
    • 400g Sliced beef feather steak
    • 300g pack Vegetable and beansprout stir-fry mix
    • A dash of water
    • 1 tbsp Soy
    • 2 tbsp Sherry
    • 5 tbsp Oyster sauce


    1. Cook the egg noodles, drain; toss with groundnut oil.
    2. In a wok, heat together 1 tbsp oil and the garlic cloves for 30 seconds. Increase the heat, adding the beef steak and cook for 1 minute; set aside.
    3. Heat 2 tsp oil in the wok, and add the vegetable and beansprout stir-fry mix. Then, stir-fry for 2 minutes and add a dash of water, 1 tbsp soy and 2 tbsp sherry.
    4. Add the beef, noodles and 5 tbsp oyster sauce. Toss it all together and serve.

    Toss the noodles with sesame oil to prevent them sticking.
