best ever truffles

not too rich or sweet.

  • Total time: 30 mins

Ingredients

  • 4 1/2 ozs melted chocolate (70% cocoa)
    2 tablespoons brandy
    1 1/2 oz butter
    2 oz ground almonds
    2 oz sifted icing sugar
    Cocoa powder

Method

  1. Melt chocolate over hot water, add brandy, allow to cool slightly. Beat in butter, almonds and sifted icing sugar. Form into balls, cool and then roll in cocoa powder. Freeze until required.
