    Bill Granger's baked salmon with caramel sauce

    • Preparation time: 5 minutes

    Serves: 6

    Ingredients

    • 2 x 500g select farm salmon prime fillets
    • 2 tbsp groundnut oil
    • 4 tbsp light brown muscovado sugar
    • 4 tbsp caster sugar
    • 4 tbsp fish sauce
    • 4 tbsp lime juice

    Method

    1. Preheat the oven to 200C, gas 5. Dry the salmon with kitchen towel. Brush with the oil, season and bake for 10-12 minutes, depending on how well done you like it.
    2. Make the caramel sauce by placing the sugars and 4 tbsp water in a small saucepan over a low heat. Heat gently until the sugars have dissolved. Continue to cook over a medium heat for about 4 minutes, until the caramel is a light golden colour. Remove from the heat, add the fi sh sauce and lime juice and stir.
    3. Transfer the salmon to a serving platter. Serve the caramel sauce on the side. Accompany with steamed rice, and the green bean and mange tout salad.
