    Bill Granger's green bean and mange tout salad with sesame seeds

    • Vegetarian
    • Preparation time: 5 minutes
    • Cooking time: 6 minutes, plus chilling

    Serves: 6

    Ingredients

    • 200g green beans, topped
    • 150g trimmed mange tout peas
    • 90g baby pak choi, or pak choi, halved or quartered
    • 30g pea tops
    • 150ml light soy sauce
    • 150ml mirin
    • 2 tsp sesame seeds

    Method

    1. Blanch the beans, mange tout and pak choi in three batches in boiling water for 2 minutes (they should be bright green). Drain and refresh in cold water.
    2. Mix the beans, mange tout, pak choi and pea tops with the soy sauce, mirin and sesame seeds. Chill before serving.
