    Bill Granger's individual coconut flans

    • Vegetarian
    • Preparation time: 20 minutes
    • Cooking time: 45 minutes, plus overnight chilling
    • Total time: 65 minutes, plus overnight chilling 60 minutes 5 minutes

    Serves: 6


    • 300ml semi-skimmed milk
    • 400ml half-fat coconut milk
    • 60g light brown soft sugar
    • 125g caster sugar
    • 4 eggs
    • 3 egg yolks
    • 1 pomegranate, seeds


    1. In a small pan, bring the milk and coconut milk just to the boil. Remove from the heat, cover and set aside.
    2. Preheat the oven to 150C, gas mark 2. For the caramel, place the brown sugar, 110g of the caster sugar and 285ml water in a pan over a medium high heat and stir until the sugar dissolves. Bring to the boil and cook for about 10 minutes, until it is the colour of golden syrup. Remove from the heat and divide between 6 ramekins.
    3. Place the eggs, egg yolks, remaining 15g caster sugar and the coconut milk mixture in a bowl and whisk lightly. Strain into the ramekins and place in a large roasting tray. Half-fill the tray with hotwater. Cover with foil and bake for 40–45 minutes until the flans are set but still have a slight wobble. Allow to cool, then refrigerate overnight.
    4. To serve, turn out the flans and surround each with pomegranate seeds.
