    Bill Granger's Passion fruit, banana and coconut muffins

    • 30g unsalted butter
    • 175ml honey
    • 125ml whole milk
    • 125ml vegetable oil
    • 3 eggs
    • 300g plain flour
    • 2 tsp baking powder
    • 200g desiccated coconut
    • 2 ripe bananas, peeled and mashed
    • 6 passion fruit, halved


    1. Preheat the oven to 180C, gas mark 4. Place the butter and honey in a small saucepan and cook over a medium heat for 5 minutes, until slightly caramelised.
    2. Put the milk, oil and eggs in a large jug and whisk until combined
    3. In another bowl, mix the flour, baking powder and coconut. Stir in the banana and scoop in the passion fruit pulp. Stir in the milk mixture until the dry ingredients are just moistened. Fold in the butter mixture till just combined; don’t over-mix.
    4. Line a 12-hole muffin tin with baking paper or paper cases and spoon in the batter. Bake for 25–30 minutes till golden and a skewer comes out clean. Cool slightly on a wire rack before serving.
