    Bill Granger's Prawn, cherry tomato and herb pesto pizza

    Ingredients

    • 1 pizza base, rolled out
    • 4 tbsp simple tomato sauce
    • 80g raw peeled king prawns
    • 4 cherry tomatoes, halved
    • ½ ball buffalo mozzarella, torn
    • 2 tbsp extra virgin olive oil, plus extra for drizzling
    • 1 tbsp chopped mint
    • 1 tbsp chopped parsley
    • 1 garlic clove, crushed
    • 1 tbsp pine nuts, roughly chopped
    • squeeze lemon juice

    Method

    1. Spread the pizza base with the tomato sauce, using the back of a spoon. Arrange the prawns, tomatoes and mozzarella on top and season.
    2. Drizzle with olive oil and bake for 8–10 minutes, until the base is crisp and golden. While the pizza cooks, combine the olive oil with the rest of the ingredients to make the herb pesto. When the pizza is done, remove it from the oven and drizzle with the pesto.
