    Bill Granger's Ricotta, mushroom, mozzarella and thyme pizza

    Makes: Makes 1 pizza

    Ingredients

    • 1 pizza base, rolled out
    • 4 tbsp ricotta
    • 1 tbsp chopped thyme
    • ½ ball buffalo mozzarella, torn
    • 1 tbsp olive oil, plus extra for drizzling
    • 125g chestnut and/or portabella mushroom sliced
    • squeeze lemon juice

    Method

    1. Spread the pizza base with the ricotta, then sprinkle over half the thyme and the mozzarella. Drizzle with a little olive oil, season and bake for 8–10 minutes, until the base is crisp and golden.
    2. While the pizza is cooking, fry the mushrooms in the olive oil in a hot pan for 5 minutes until golden and softened. Add the rest of the thyme and a squeeze of lemon juice, then season. When the pizza is cooked, top with the mushrooms and an extra drizzle of olive oil.
