    Bill Granger's spiced prawn and cucumber bites

    Serves: 6


    • 20g coriander, a few sprigs reserved for garnish
    • 7 garlic cloves
    • 2 tsp light brown muscovado sugar
    • 1 red chilli, deseeded and roughly chopped
    • 3 tbsp lime juice
    • 2 tbsp fish sauce
    • 24 cooked king prawns, defrosted if frozen, halved lengthways
    • 2 tsp frozen crushed lime leaves
    • 1 tbsp groundnut oil
    • ½ cucumber


    1. Reserve a few coriander sprigs for garnish then place the coriander (including stems), 1 garlic clove and sugar in a mortar and grind to a paste with a pestle. Add the chilli and pound. Add the lime juice and fish sauce and stir. Toss the prawns and lime leaves with the dressing in a medium bowl and set aside.
    2. Slice the remaining 6 garlic cloves. Heat the groundnut oil in a small frying pan over a high heat and use to shallow fry the garlic until golden. Drain on kitchen paper.
    3. Peel the cucumber lengthways to create vertical stripes of equal width. Slice the cucumber into 5mm rounds and arrange on a serving platter. Top each slice with a teaspoon of the prawn mixture. Serve scattered with crispy garlic slices and leaves from the reserved coriander.
