    Bill Granger's Tenderstem broccoli with soy dressing

    Serves: 6

    Ingredients

    • 600g tenderstem broccoli, trimmed
    • 1 tbsp sunflower oil
    • Soy dressing
    • 5 tbsp soy sauce
    • 2 tbsp chinese black rice vinegar
    • 1 tbsp sunflower oil
    • 1 red chilli, deseeded and finely chopped
    • 1 tsp caster sugar
    • ½ lime, juice

    Method

    1. To make the soy dressing, put all the ingredients into a bowl and stir well to combine.
    2. Cook the broccoli in boiling salted water with the sunflower oil for 4–5 minutes, until just tender but still crisp and bright green. Drain and arrange on a warm serving dish.
    3. Pour the dressing over the top and serve immediately.
