    Bill’s steak sandwich

    This has been on the menu at my restaurant forever and is very popular. Using premium cuts of meat for a sandwich may seem decadent, but you only need a thin slice.

    • Preparation time: 15 minutes
    • Cooking time: 45 minutes
    • Total time: 1 hour 60 minutes

    Serves: 4


    • 6 Tomatoes, halved
    • 4 tbsp Olive oil
    • 1 tsp Cumin seeds
    • 1 tbsp Brown sugar
    • 1 Large onion, finely sliced
    • 2 tbsp Balsamic vinegar
    • 4 Thin sirloins or fillet steak slices, fat trimmed
    • 4 Ciabatta buns, split
    • 50g Rocket
    • Garlic dressing
    • 150ml Whole-egg mayonnaise
    • 1 tbsp Balsamic vinegar
    • 2 Garlic cloves, crushed


    1. For the dressing, mix the mayonnaise with the vinegar, garlic, some sea salt and pepper.
    2. Preheat the oven to 200˚C/gas 6. Arrange the tomatoes, cut-side up, on a baking tray. Drizzle with 1 tbsp oil, season, and sprinkle with cumin and sugar. Roast for 30 minutes.
    3. Heat 2 tbsp olive oil in a large frying pan over a medium heat, add the onion and cook until golden – about 10 minutes. Add the vinegar, season and cook for another minute. Remove from the pan and set aside.
    4. Season the steaks and, in the same pan, heat the remaining oil over a high heat. Add the steaks and cook for 1 minute, then cook the other side for 1 minute.
    5. Spread each bun with garlic dressing, and fill with rocket, tomatoes, steak and onions.
