    Bitter chocolate tart

    This is a recipe which I would like Waitrose to add to their chiller

    Serves: 6

    Ingredients

    • 250 g shortcrust pastry

      Filling
      250 g good quality plain chocolate
      150 g white chocolate, broken into pieces
      100 g unsalted butter
      100g caster sugar
      3 eggs, plus 4 egg yoks
      clotted cream to serve

    Method

    1. . Prehaet the oven to 200C/400F. Roll out the pastry and use to line a 23 cm round loose-bottomed flan tin. Lightly prick the base, then line the tin with greaseproof paper and fill with baking beans. Bake for 15 minutes. Remove the beans and papaer, then bake for 8-10 mins more until the pastry is pale goldn, set to cool.

Make the filling: break 150 g of the plain chocolate into small pieces and a heatproof bowl with the white chocolate and butter. set over a pan of simmering water and stir until the chocolate has melted. remove from the heat and set Make the filling: break 150g of the plain chocolate into small pieces in a heatproof bowl with the white chocolate and butter. In a clean bowl, whisk together the caster sugar, eggs and extra yolks for abouot 10 mins until thickened, then fold in the melted chocolate mixture.
    3. Greate the remaining plain chocolate and scater over the pastry case, then pour over the filling. Bake for 8 mins until set. Remove the tart from the oven and allow to cool then chill until ready to serve with clotted cream
