Blackberry Bombe

This is a really nice dessert if you are planning a summer party. It is full of blackberries which a blackberry sauce!

  • Total time: 20 mins making 1 hour in the fridge.

Serves: 6


  • 1 lb blackberries

    4 oz granulated sugar

    1 table spoons water

    half pint whipping cream, whipped lightly.

    3 oz meringue, broken up (not too small). I used meringue nests.

    2 pint mould/basin. Or lots if ramekins.


  1. First make the Bramble Puree. Cook fruit sugar and water gently until soft. Cool slightly and sieve. (You need half pint for mixing, reserve the rest)
  2. Fold the meringue into the cream. Then fold the half pint of the puree.
  3. Pour into mould. Freeze and keep frozen until you want to serve. Freeze the remaining puree too. (If using ramekins, you can put the puree into ice cubes, which is about one portion per ramekin.)
  4. To serve, place in the fridge to warm slightly, or in the kitchen, if you forget to get it out in time. Ramekins take less time to come up to temperature. Take puree out well ahead so that it is completely thawed. (I pop it into the microwave as I usually forget!)
  5. Finally! Pour over the puree. It is dark red against the pinker bomb and it really gives it that summery look. Enjoy !!!
