    Blackened Cajun Steak with Avocado Salsa

    • Avacodo salsa
    • 3 tbsp lime juice (or to taste)
    • ½ red or green chilli (or to taste), finely chopped
    • Handful of coriander leaves, finely chopped
    • ½ red onion, finely diced
    • 2 ripe avocados
    • Salt and freshly ground black pepper
    • Blackened steak
    • 1½ tbsp paprika
    • 2 tsp garlic granules
    • ½ tsp cayenne pepper
    • ½ tsp dried oregano
    • ½ tsp dried thyme
    • 4 sirloin steaks, each weighing about 200g
    • 5 tbsp olive oil


    1. Make the salsa: put the lime juice in a small bowl, add the chilli, coriander and red onion. Halve, stone and peel the avocados, cut into medium-sized dice and gently stir into the lime mixture. Season. Adjust the lime juice and chilli according to your taste.
    2. Mix the paprika, garlic granules, cayenne pepper, oregano and thyme. Season liberally. Score the fat on the steaks to prevent them curling as they cook. Coat the steaks in 4 tbsp olive oil and sprinkle evenly with the herb and spice mixture, patting it on to the steaks on both sides.
    3. Place a large, non-stick frying pan over a high heat. Open all the windows and, once the pan is hot, add the remaining 1 tbsp oil. Swirl around the frying pan then add the steaks. They will sizzle and smoke dramatically. For medium-rare, cook for 2 minutes on one side, then flip over and cook for 2 minutes on the other side. Serve with the avocado salsa and chips.
