Blueberry Muffins

I know Blueberry muffins aren't exactly new to the world, but I've found a way to make really nice ones.

  • Total time: About 1 1/4 hours


  • You will need only 2 eggs, but measure the flour out for 3, OK?

    Self-raising flour
    Caster sugar
    4 tablespoons fresh blueberries
    1/4 teaspoon vanilla essence
    A few extra blueberries
    for decoration


  1. Measure out the margarine and caster sugar against the 2 eggs. Measure out the flour against 3 eggs, then put the third egg back because you don't need it. Cream the eggs and margarine for about 2 minutes in a mixer.
  2. Add the sugar and blend again. Then put in the flour and mix. Finally add the vanilla essence and blueberries, and mix for about 45 seconds. Put cake cases in a 12 space muffin tray, or grease it if you don't have cake cases.
  3. Using 2 spoons, fill the spaces up right to the top. Cut up the extra blueberries for decorating and put a few bits on top of each muffin without sinking them into the mixture. Then put in the oven at 180°C for about 25 minutes. Delicious!
