Braised Beef in a Rich Peanut Sauce

This is a lovely flavoured dish, the peanut butter adds a lovely flavour. Unfortunately I forgot to buy the tamarind sauce so didn't add it, and I'm sure it would have added an extra dimension to the dish. Will definitely remember it next time!

  • 880g beef stewing steak
    225g swede or celeriac
    3 tbsp easy cook white rice
    3 tbsp vegetable oil
    2 onions
    2 garlic cloves
    1 tsp paprika
    1/4 tsp turmeric
    425ml boiling beef stock
    3 tsp fish sauce or anchovy sauce
    2 tbsp tamarind sauce (optional)
    2 tsp soft light brown sugar
    1 bay leaf
    1 sprig of thyme
    2 tbsp smooth peanut butter (or crunchy would be nice too!)
    1 tsp white wine vinegar


  1. Using a sharp knife, cut the beef into 1 inch cubes. Heat 2 tbsp of the oil in a pan and fry the beef, turning until well browned all over.
  2. Transfer the meat and any juices to a slow cooker and switch the cooker to high.
  3. Add the remaining 1 tbsp oil to the frying pan, add 2 chopped onions and fry gently for 10 mins until softened.
  4. Add 2 crushed cloves of garlic, 1 tsp paprika, and a pinch of turmeric to the pan and cook for 1 min. Transfer the mixture to the slow cooker and add 225g of peeled and cubed swede or celeriac.
  5. Pour in 425ml of boiling beef stock, 1 tbsp fish sauce (or you can use anchovy sauce), and 2 tbsp tamarind sauce (optional) and add 2 tsp soft light brown sugar, 1 bay leaf, and 1 sprig of thyme. Cover with the lid then reduce the heat to low and cook for 4 hours or until the beef and vegetables are just tender.
  6. Turn the slow cooker up to high, then remove about 4 tbsp of the cooking juices to a bowl and blend with 2 tbsp smooth peanut butter. Stir the mixture into the casserole, sprinkle with 3 tbsp easy cook white rice, and stir again to combine.
  7. Cover the pot and cook for about 45 mins, or until the rice is cooked and the sauce has thickened slightly. Stir in 1 tsp white wine vinegar and season to taste.
