    Bramley Rings with Figs and Walnuts

    A quick version of baked apples that's a great way of adding to your five-a-day tally of fresh fruit and vegetables. Vary the dried fruit and nuts according to taste.

    • Preparation time: 5 minutes
    • Cooking time: 15 minutes
    • Total time: 20 minutes 20 minutes

    Serves: 2


    • 25g Waitrose Walnut Halves, roughly chopped
    • 50g Waitrose Semi-dried Figs, roughly chopped
    • 1/4 tsp ground cinnamon
    • Juice of 1/2 small orange
    • 2 tsp Waitrose Select French Chestnut Honey or other clear variety
    • 1 large (or 2 small) Bramley apple (about 400g), peeled and cored


    1. Preheat the oven to 200°C, gas mark 6. Mix the walnuts with the figs, cinnamon, orange juice and honey.
    2. Cut the apple horizontally into 4 thick slices (if using small apples cut in half horizontally through the middle). Arrange on an oiled baking sheet and spoon the nut mixture into the centre. Drizzle with any remaining juices.
    3. Add 3 tbsp water to the baking sheet and bake in the oven for 15 minutes, or until cooked through. Take care not to burn the nuts. If they start to brown too much, cover with a small square of foil.
    4. Serve immediately with low-fat crème fraîche or 0% Total Fat Greek Yoghurt.

    Cook's tips

    Vary the dried fruit as you wish. Some good combinations are dried cranberries with almonds, prunes with pecan nuts, or dates and hazelnuts.
