    Brandy Snaps

    • Preparation time: 40 minutes
    • Cooking time: 12 minutes to 16 minutes
    • Total time: 52 minutes to 56 minutes 60 minutes

    • 50g unsalted butter
    • 50g caster sugar
    • 1½ tbsp golden syrup
    • 50g plain flour
    • ½ tsp ground ginger
    • 2 tsp brandy
    • ½ tsp lemon juice


    1. Preheat the oven to 190°C/gas mark 5. Lightly oil a non-stick baking tray.
    2. Put the butter, sugar and syrup in a heavy-based pan. Warm gently until melted and combined. Cool.
    3. Sift in the flour and ginger. Add the brandy and lemon juice, mix well.
    4. Put 4 large spoonfuls of the mixture onto the baking tray. Allow plenty of room between each. Bake for 6-8 minutes or until golden. Leave to cool slightly, then remove and place on a cooling rack. Repeat with the remaining mixture.
