    Briami - Baked Courgettes and Potatoes

    Serves: 6


    • 675g courgettes
    • 450g potatoes, peeled and halved or quartered as for roast potatoes
    • 1 green or red pepper, deseeded and sliced
    • 3 cloves garlic, peeled and sliced
    • 1 medium onion, roughly chopped
    • 3 tablespoons parsley, chopped
    • 150ml olive oil
    • 450g ripe tomatoes, chopped, or a 400g can tomatoes
    • 1 teaspoon oregano
    • Salt
    • Freshly ground black pepper


    1. Mix all the vegetables together with salt, black pepper, olive oil and the tomatoes in a large baking dish. Sprinkle the oregano on top.
    2. If using a wood-fired oven, cook for approx 45 minutes, basting occasionally, until it feels, looks and tastes ready. If using a conventional oven, pre-heat it to 190°C/gas mark 5, and cook for about 1½ hours.
