    Brinjal Masala

    Serves: 6


    • 150ml sunflower oil
    • 2 large aubergines, in 1cm slices
    • Chilli powder
    • Salt


    1. Heat half the oil in a frying pan and add half the aubergine. Fry for 5-8 minutes each side until golden brown. Drain on kitchen paper.
    2. Keep warm while cooking the remaining aubergines with the remaining oil. Sprinkle with chilli powder and salt to serve.
